ADHD and ASD cookbook, summary(1)

Casein is the main protein found in milk, but do not confuse milk-free with protein-free as casein is found in products other than milk, such as: yogurt and ice cream and in many baked goods and other unexpected places as canned tuna.

Food Reactions:

the antibodies that result from traditional food allergies are IgE antibodies which trigger the release of histamine.
the antibodies that result from food sensitivity are IgG antibodies and this reaction is delayed to 2 or 3 days.
the reactions are different and the testing is different.

IgE reactions are fast and obvious, we are all familiar with these traditional allergies , 
a person eats foods and develops wheezes,  a person with peanut allergy can develop severe allergic reactions and life threatening symptoms  after eating peanut.
cause and effect of this reactions are easy to figure out because the reactions occur very quickly.
these reactions do not have a direct negative effect on the brain
while people may become irritated from wheezing and rashes but not from effect of the food on the brain.
the most common foods that provoke these reactions are:
milk, eggs, peanut, tree nuts, fish, soy and wheat.



IgG sensitivity may result in physical symptoms similar to allergies but also have behavioral or developmental symptoms, 
milk wheat, soy, corn 

symptoms of food sensitivity and food intolerance : 

general symptoms:fatigue, food cravings.

skin:eczema, rash

Digestions;
stomach ache, loose stool or diarrhea, constipation

respiratory: mucous production, congestion

immune reactions

CVS: abnormal pulse, elevated BP

neuorologic: headache, tingling , dizziness

psychological : depression , mood disorders, anxiety

behavioral: ADHD symptoms, ASD symptoms


food breakdown into small parts,

fats to FA 
carb to simple sugars
these foods allowed to cross intestinal lining to the blood and then to the brain

the lining of the intestine if healthy prevents these foods form going out to the blood stream until they have been fully digested.
similar to window screen allow good air but not allow flies

when intestinal lining is damaged allow this food(large molecules) to enter blood stream like holes in the window screens letting in bugs
(LEAKY GUT)

ADHD and ASD children have problems with their intestinal lining

during digestions not all of the AA digested, residues of short chains AA called peptides , the body consider peptides which leak into the blood stream as foreign and may cross the brain and send abnormal signals which mainly responsible for ASD and ADHD behavioral symptoms. 



celiac dis:
medical disorder in which gluten is not tolerated 
intake of gluten results in autoimmune reactions
the body recognizes the cells in the lining of the small intestine as foreign and reacts against them
this changes the anatomy of the intestinal lining and makes it leaky

it may be presents in some of ASD and ADHD children
its ttt is 100% restriction of gluten not only 99%

if present and not treated for years the risk of other autoimmune diseases increase as lupus or rheumatoid

test of celiac dis mush be done before starting elimination of gluten.

many people suffer form gluten sensitivity and negative for celiac, these people also are intolerant to lactose and soy

learn about opiate like peptides resulting from poor digestion of gluten, casein and soy and may result to many behavioral symptoms in children with ADHD and ASD


the child response to elimination of food is better than any blood test.

"elimination and challenge"
to test whether you have intolerance from certain food eliminate it for a period, there will be obvious and strong reaction if the food is reintroduced in those who have intolerance from it.

Nutrition and the brain 

Nutrition during pregnancy, quality of breast milk,and food children eat supply the raw materials to construct their brain and ultimately supply their brain power.

Nutrition in the critical early years of life is essential.

What a person eat affect the levels of neurotransmitters and structure of cells and regulate all mental processes that affect how well we think and feel.

Children who were breast-fed past the first birthday have better IQ scores than those raised on formula.

Breast milk contains omega 3 fatty acids and DHA which are essential for optimal brain development.

The omega 3 content of breast milk is dependent on the mother's consumption of food containing omega 3 fatty acids 
mother consumption of vegetables and other produce can increase the nutritional content in her breast milk.

A complete symphony of phytonutrients in fruits vegetables beans and nuts can be transmitted to the breast milk and play a role in development of your child .

Breast-fed babies are not generally smarter than bottle-fed babies but breast-fed babies from mothers who ate a very healthy diet throught their pregnancy and nursing period.gave their children the great capacity of brainpower later in life.

At younger ages the brain is most sensitive to negative nutritional influences.

Hyperactivity,attention deficit ,depression and other psyciatric disorders have their roots in early life nutrition.

Many people think that fat is the culprit behind obesity .

but the type and source of fat are critical 
Raw nuts,seeds and avocados are also rich in fat but they contain healthy fat important for normal growth and development,  they are rich in nutrients as well.

In one study men who eat nuts had half the heart attack compared to men who did not eat nuts.

Eating nuts and seeds makes us live a lot longer and prevents both heart disease and cancer .

eating walnuts , almonds ,sunflower seeds ,flax seeds is  the best way for us andfor our children to get the healthy fat we need naturally from unpolluted source

nuts contain also minerals and antioxidants not only healthy fat 

Allergies to peanuts affects one percent of children 
Reasons include : 
misuse of antibiotics
brief or lack of breastfeeding 
too early introduction of solid food
roasting of nuts

Many vegetable oils have been artificially saturated or hydrogenated .

Trans fat or Phantom fat is created during the process called partial hydrogenation. 

Although some of the foods made by the vegetable oils claim to be low in calories,fat or cholesterol , the numbers are not listed for trans fat which is even worse than cholesterol. 


Trans fat are as powerful as saturated fat in promoting disease .

This problem is even more insidious because more manufacturers are not required to list the quantity of their trans fat in their products .

Both saturated fat and transfat raise the amount of LDL or bad cholesterol. 

But trans fat also lowers the levels of HDL which is the good cholesterol .


The effect of trans fat and saturated fat on cholesterol is even worse than the eating cholesterol itself.

any food fried in the vegetable oil is the worst.


Processed food and fast food not only contain the trans fat or other additives, they also are high in acryl amides.
like, chips,french fries and sugar coated breakfast cereals .

Acryl amides also form in foods you bake until brown or fry at home ,they do not form in foods that are steamed or boiled .

Many of the foods children eat contain high levels of Acryl amides .
Acryl amides cause genetic mutations in lab animals and cause cancer .

Although not proven in human but most scientists working in that field presume that it does.

Animal products contain no antioxidants,bioflavonoids,carotenoids,folate,vit c, vit k ,or those thousands of phytochemicals that are essential .


Americans eat 50 percent of calories from processed food such as oil, sugar , and white flour products .


Most of the animal products such as cheese and milk are exceptionally high in saturated fat ,saturated fat consumption correlates with cancer incidence worldwide, it also raises cholesterol level and causes heart disease .

There is overwhelming evidence that reduction in saturated fat ,dietary cholesterol and weight offer the most effective dietary strategies for reducing total cholesterol, LDL levels and cardiovascular risk .

The development of heart disease begins in childhood.


Unhealthy diet create a cellular environment favorable for the development of cancer.


Diet of children :
high in saturated fat,lots of processed(man made) food ) with dangerous trans fats,insufficient intake of unrefined plant foods.

Americans eat only 5% of calories from fruits,vegetables,beans,and unprocessed nuts and seeds, the foods that contain the necessary nutrients to maintain normal health.


We should not be surprised if our 25 year old daughter develops lupus or our eighteen-year -old son develops ulcerative colitis , once they pass their child-bearing years many of our children will be overweight ,age rapidly, require drugs for hypertension,diabetes, and heart disease , have a heart attack or die prematurely from cancer.
